High protein pancakes
INGREDIENTS
- 3 whole eggsย
- 6 egg whites (approximately 3/4cup or 180 grams)
- 1 1/3 cup cottage cheese (approximately 215 grams )
- 1/3 cup pancake mix
Pancake mix
- 2 cupsย (204 g)ย rolled oatsย
- 1 cupย (240 mL)ย milkย of your choice.
- โ cupย (80 mL)ย unsweetened applesauce
- 2 Tbspย (30 mL)ย maple syrupย
- 1 Tbspย (14 g)ย coconut oil or butter, melted, plus extra for frying
- 2 tspย (5 g)ย ground cinnamon
- 1 tspย (5 g)ย baking powder
- 1 tspย (5 mL)ย pure vanilla extract.
- ยฝ tspย saltย
DIRECTIONS
- In a food processor, blend the oatmeal into a flour. Alternatively, use store-bought oatmeal flour.
- Combine all the pancake ingredients and mix.
- Preheat a large pan on medium-high heat with oil. When hot, spoon about ยผ cup of batter onto the pan for each pancake. Cook for about 2 minutes.
- When the bottom becomes golden, flip and cook for another 2 minutes, or until lightly golden.
- For a more balanced breakfast, enjoy these pancakes with some creamy nut butter drizzled overtop, fresh fruit, and creamy yogurt.
